Shrimp Scampi with Zoodles

delicious garlicky goodness

What is this shit? A recipe? Where and when did this come from?

It’s been awhile since I’ve cooked.. I probably eat out at least 50% of my meals. Between that and how often I work and travel, I just don’t make anything too fun or fancy these days. This dish is delicious and quick, so I thought I’d share.

Shrimp Scampi with Zoodles
what you’ll need
2 zucchini, sliced into “noodles” with either a mandolin or a spiral shaver
1/2 pound of shrimp, deveined and tail removed
Salt & pepper to taste
6 cloves of garlic, minced
1 Tbsp unsalted butter
A few splashes white wine
A few splashes lemon or lime juice
Olive oil (enough to coat a pan)

what to do
Preheat the oven to 400. Slice those zukes with your instrument of choice and mince the garlic. Oil up a pan and throw that all in there with a bit of s&p. Pop that in the oven for about 15-20 minutes. While that’s going, sauté that shrimp with the remaining ingredients. Don’t overcook it! When the zucchini is done, drain it while reserving the garlic. Throw it on a plate and pour the shrimp on over. Then eat your heart out suckerrrrrs. Or um, before you do any of that, if the zucchini is too wet for you still, pan fry it for a few minutes on high to dry it up.
