Fuck baked ziti. So fucking boring. No thank you.
This is probably my boyfriend’s favorite non elaborate dish I make for him… He does have the palate of an 8 year old, but it is pretty damn good. It’s pasta, cheese, meat, sauce. How can you go wrong?
what you need
1 pound tortellini
1 pound chopped up cooked bacon
1 jar vodka sauce
1/2 pound of grated mozzarella
Italian seasonings to taste
Preheat your oven to 400. While you’re waiting for this to heat up, you want to cook the bacon and let drain on a paper towel. Cook the tortellini according to directions, but subtract 2 minutes from the time because you’ll be finishing it off in the oven and no one likes mushy fucking pasta. Drain this incredibly well or you’ll be sad. After everything is cooked, put the pasta, half the cheese and bacon, some herbs, and most of the jar of sauce in a 9×9 baking dish. Mix it all up so its evenly coated. Top with the rest of the cheese and bacon. Cover with foil and bake for 15 minutes. Take the foil off, bake for an additional 5 minutes to finish it off. You can even broil it if you want the top cheese to be a bit browned.
This will easily feed 4 people, but usually it’s 2 people for 2 meals. That’s where the leftover sauce comes in. When you reheat something, it dries out. Add some extra sauce and cover with the foil to reheat in the oven. Or no foil in the microwave, DUH.
Other times I’ve made this, I’ve varied the recipe slightly… Sometimes I use ground beef browned and drained instead of bacon. Sometimes 50/50 bacon/chicken. The boy toy requested bacon/ground beef next time; we will see. Also you could use a red sauce instead of vodka. Alfredo sauce is good with the chicken/bacon protein combo.
